In a large frying pan, heat the olive oil and butter until hot.
Turn the heat to medium, add the sourdough croutons and stir constantly, 10 minutes or so until the croutons start to colour.
Add the garlic and salt and saute another 5 minutes until crunchy and golden.
toss through the parsley and enjoy!
