Creamy Cauliflower Soup


A true favourite, this creamy cauliflower soup is literally comfort in a bowl. Exceptional with crunchy garlic croutons, a swirl of sour cream, or bumped up with fresh herbs and a sprinkle of chilli flakes, you can really take in in any direction you feel!

Instructions
  1. In a large saucepan, sweat down the onion and garlic over medium heat until soft and starting to brown gently.
  2. Add the chopped cauliflower and stock, and bring to a boil.
  3. Reduce heat and simmer for 20 minutes or so, or until the cauliflower is super tender and falling apart.
  4. Blend until smooth and then check for seasoning.
  5. Stir in the cream, to taste, and to your preferred thickness.
  6. Serve with a drizzle of good olive oil and cracked black pepper.
