The purple cauliflower gives a fun twist on an old potato gem favourite – with extra veggies to boot!
You can totally use regular cauliflower, but purple is so much cooler.
Cheesy Purple Cauliflower Potato Gems
In a large saucepan, cover the potatoes with water and bring to a boil.
When the potatoes are soft, add the florets of the purple cauliflower and leave with the lid on a few minutes until the cauliflower has steamed.
Drain the vegetables and mash well or blend in a food processor until smooth.
Add the flour, egg, cheese, salt and pepper.
Form into small nuggets and place on a greased baking tray.
Bake for 20-30 minutes until golden (they can also be fried).
Serve with your favourite dipping sauce.
