A quick trip away for the weekend before the school term begins had me searching the internet for healthy snacks for us all to enjoy. Not only that, I wanted to try something new with the cauliflower we have been receiving in our weekly orders.
Our kids are crazy popcorn lovers so I thought I would combine their love for popcorn and one of their favourite vegetables and make cauliflower popcorn. It was a hit and will now become a regular in the school lunch boxes and as a weekend snack! I found this recipe on the Taste website and can’t wait to experiment with different herbs and spices.

Ingredients
- 1 organic cauliflower cut into florets
- 2 organic eggs whisked
- 1 cup panko breadcrumbs
- 1/2 cups organic parmesan
- 1 tsp organic smoked paprika
- 2 tsp organic thyme roughly chopped

Instructions
- Preheat oven to 200°C.
- Cook the cauliflower in a large saucepan of boiling water for 5 mins or until just tender. Drain well.
- Coat the cauliflower in the whisked eggs.
- Combine the breadcrumbs, parmesan, paprika and thyme in a large bowl.
- Add the cauliflower mixture and toss to combine.
- Place the cauliflower in a single layer on a baking try. Drizzle a little olive oil and bake for 20-25 minutes.
- Serve and enjoy!
