Instructions
  1. In a large pot, simmer the carrots until super tender, about 15 or 20 minutes.
  2. Put the carrots, salt, ginger, orange juice, garlic and a little of the carrot cooking water into a blender (or use a stick blender) and whizz until very smooth. Adjust your thickness with extra carrot water, orange juice, or filtered water, to taste.
