Breakfast is the most important meal of the day! So this week when I saw fresh Apricots in my weekly grocery bag I was so excited to make these delicious bright and vibrant breakfasts bowls. Not just a pretty face trust me, they are also super delicious AND super nutritious. See colour, eat colour; that's my general rule of thumb to ensure I get in all the vitamins and minerals my body needs to function at its best. Enjoy!

Ingredients
Cardamom Poached Apricots
- 10 organic apricots
- ½ cup water
- ¼ tsp cardamom
- 1 tsp organic honey
- 1 tsp organic lemon juice
Chai Spiced Oats
- ¾ cup organic rolled oats
- 1/2 cup water
- ½ cup organic soy milk Feel free to use your favourite milk, however the soy and spices together give THE BEST flavour.
- 1/8 tsp ground cloves
- 1/8 tsp ground cardamom
- ¼ tsp organic ground cinnamon (or a cinnamon stick or two)
- ¼ tsp salt
- 2 tsp organic honey More to taste if required.
To Garnish
- 1-2 tsp macadamia butter You can also use peanut or almond butter BUT the falvour of macadamia with the apricots is something else!
- ½ tsp organic honey

Cardamom Poached Apricots
- Cut each apricot in half, remove the seed and set aside.
- In a small frypan (shallow pan) heat the water while mixing in the cardamom, honey and lemon juice.
- When the water starts to boil, add the apricots.
- Cook for approx. 5 minutes on a medium heat until the water has almost completely evaporated. The liquid left over becomes a delicious syrup. Leave the apricots atop the stove to keep warm while you whip up the oats.
Chai Spiced Oats
- Add the water, milk and oats to a small saucepan and bring to the boil. Then add the spices, salt and honey.
- Cook for approx. 10 minutes stirring occasionally, or until the oats are soft. (Stirring really helps to keep everything nice and creamy!)
- Pour the cooked oats into a bowl, top with the poached apricots, drizzle with the macadamia butter and a bit of honey.
- Then enjoy with love!
