Caramelised Onion and Rocket Pizza
  1. In a large bowl (or in your breadmaker) combine the warm water, yeast and sugar.
  2. Leave 10 minutes or so, until foamy.
  3. Meanwhile, peel and slice the red onions thinly.
  4. Heat the two tablespoons of olive oil in a pan and saute the red onions on low for about 15-20 minutes.
  5. While that is sauteeing, add the plain flour, 1 teaspoon salt, and 1 tablespoon olive oil to the foamy yeast. Mix together until all is combined and knead for 10 minutes until dough is smooth and elastic. Cover and leave to rise in a warm place about 1 hour or until doubled in size.
  6. Add the balsamic vinegar, brown sugar, salt and pepper to the red onions and continue sauteeing until they become sticky and fragrant. Leave to cool.
  7. Preheat your oven to 200C.
  8. When the dough has risen, punch it down and turn it out onto a floured surface and divide into 4 pieces.
  9. Roll the dough out into circles and place on pizza trays.
  10. Top with the caramelised onion and divide the goat cheese or feta evenly over the four pizzas.
  11. Bake for 20-25 minutes until pizza is cooked through and the goat cheese is starting to get slightly browned.
  12. Divide the rocket among the pizzas and drizzle with a little extra olive oil.
