Weeknight dinners have never been so yum! A really great choice for winter, as there’s plenty of broccoli, lemon and rocket getting around. Good quality flaky sea salt and cracked black pepper a must, and a good grating of parmesan for the cheese-eaters.
In a large pot of boiling salted water, cook penne according to packet instructions.
Meanwhile, in a frying pan, saute the onion and garlic in olive oil over medium heat until translucent.
Turn the heat down to low, add the juice of one lemon, a splash of water, the broccoli, and a pinch of salt.
simmer until the broccoli is tender and toss every now and then while cooking. The sauce should thicken ever so slightly, and will thicken further again when added to the pasta.
When the pasta is cooked, drain thoroughly.
Toss with the lemon broccoli sauce and adjust the seasoning.
serve in bowls with extra flaky sea salt, cracked black pepper, a handful of rocket, a drizzle of olive oil and the lemon zest sprinkled over. Parmesan if you eat it!
