Big Green Breaky

There’s nothing like getting a big, delicious avocado in The Organic Place fruit and veggie bag. I love how they can add that extra tasty goodness to almost anything, as well as all those amazing health benefits. Vitamins, folate, magnesium, potassium; you name it, avocado has it. We love it at our place as a quick dip with our crackers on movie night, spread on toast, and in a salad with dinner, but my absolute favourite is having avocado in a smash with feta.

There has been so much media coverage on the very expensive avocado smash breakfast in the last few years. Honestly, it is probably worth every penny. However, it is just as easy to create your own version at home. As a busy mum, my Big Green Breaky is a staple breakfast or lunch. Basically, it’s avocado smash on toast, topped with fried eggs and sauteed greens on the side. What a powerhouse of goodness to get me through the day and provide me with all the nutrients I need! And for what you get, it actually doesn’t take very long to throw together.

Instructions
  1. Add the oil to the frying pan and warm to a moderate heat.
  2. Crack the eggs into one side of the pan. (Add a teaspoon of water next to them to ensure they cook well).
  3. Slice the zucchini and place on the other side of the frying pan.
  4. Throw the spinach over the zucchini and place the lid on the pan.
  5. Meanwhile, place the feta and avocado in a bowl and put the bread in the toaster.
  6. Season the feta and avocado with salt and pepper and smash it all together.
  7. When the egg is cooked to your liking and the greens wilted, remove them to a plate.
  8. Spread the the toast with the avocado smash and serve with the eggs and greens. Enjoy!
