tomato salsa

Instructions
Preheat the oven to 150 degrees.
Heat the oil in a pan on medium to high heat.
Put in the onion, garlic and chilli and cook for a few minutes or until softened.
Add the beef mince, tomatoes and black beans and cook until the meat browns.
Turn the heat down to medium.
Throw in the spices, salt, pepper and tomato paste.
Mix and allow it to cook a little more.
On an oven-proof plate arrange the corn chips in a circle, leaving a space in the centre.
Ladle the beef sauce into the centre of the corn chips.
Spoon the salsa on top of the beef sauce.
Sprinkle the grated cheese across the sauces and onto the corn chips a little on the side.
Place the plate on a tray in the oven until the cheese melts.
Remove the plate from the oven.
Add the avocado and then the sour cream onto the centre of the plate.
Serve with sliced spring onions.
