- 125 grams organic butter softened
- 1 cup organic coconut sugar
- 2 large organic bananas mashed, and best if they're brown!
- 1 teaspoon organic vanilla extract
- 2 large organic eggs
- 300 grams organic spelt flour wholemeal spelt is good too
- 1 teaspoon organic baking powder
- 1 teaspoon organic baking soda
- 1 teaspoon organic ground cinnamon
- 1/2 teaspoon organic ground ginger
- 1/2 teaspoon organic ground allspice or ground clove

Instructions
- Preheat oven to 160°C.
- Cream the butter and sugar until pale and fluffy.
- Stir in the vanilla and banana.
- Stir in the egg.
- Mix in the dry ingredients, stirring gently until it all comes together.
- Pour into a greased and lined 20cm cake tin (or loaf tin) and bake about 60 minutes until golden and cooked all the way through.
