All your favourite things in one pot with cheese on top! It’s a fun and easy dish to have bubbling away in the oven while you are busy with other things. Serve it as a main with a loaf of crusty bread and a sharp green salad on the side, or use it as a side dish to your favourite dinner. Freezes well and is fab for lunch.
Put the potatoes in a large saucepan with enough salted water to cover. Bring to a boil and cook until the potatoes are tender, about 20 minutes.
Drain and mash with a tablespoon or so of butter and salt to taste.
Meanwhile, in another pot, add the sweet potato and enough water to cover. Bring that to a boil also and cook until soft.
Drain and mash with a bit of butter and salt to taste.
In a final pot, boil the carrot and peas until cooked. Drain.
Combine the mashed potatoes, the boiled veggies, and the chopped green onion very gently (you want to keep the potatoes still quite separate though some mixing is fine.
Fold through the sour cream very gently.
Spoon into a casserole dish and top with cheese. Bake 20 or so minutes until heated through and the cheese has browned.
