There can never be too many good recipes for apples, especially because we almost always have them available, and almost everyone loves them!
Summer or winter you need a good apple cake – for when friends drop round, for the kids’ lunchboxes or afternoon teas, as a gift for a new mum or someone who is sick, or just for you to enjoy with your 10am beverage. This cake is that happy all-rounder.
Apple and Cinnamon Tea Cake

Cream the butter and the sugar in a large bowl until light and fluffy.
Add the eggs, one at a time, beating until fully combined.
Fold in the flour and cinnamon until combined.
Fold in the apples and turn the mixture out into a 23cm lined cake tin.
Bake 30 minutes or until cake is brown, risen, and springs back lightly when you touch it. A skewer inserted into the centre should come out clean.
You can ice this cake, sprinkle with a little icing sugar, or leave plain for tea-time.
