Apple and Cinnamon Tea Cake

There can never be too many good recipes for apples, especially because we almost always have them available, and almost everyone loves them!

Summer or winter you need a good apple cake – for when friends drop round, for the kids’ lunchboxes or afternoon teas, as a gift for a new mum or someone who is sick, or just for you to enjoy with your 10am beverage. This cake is that happy all-rounder.

Instructions
  1. Preheat oven to 180C.
  2. Cream the butter and the sugar in a large bowl until light and fluffy.
  3. Add the eggs, one at a time, beating until fully combined.
  4. Fold in the flour and cinnamon until combined.
  5. Fold in the apples and turn the mixture out into a 23cm lined cake tin.
  6. Bake 30 minutes or until cake is brown, risen, and springs back lightly when you touch it. A skewer inserted into the centre should come out clean.
  7. You can ice this cake, sprinkle with a little icing sugar, or leave plain for tea-time.
