A Very Veggie Breakfast


We all know we should eat more veg – truly we do! And one meal we fall down at is usually breakfast. Maybe we don’t have time, maybe we have more of a sweet tooth, but that just means we’ve got more opportunity to shoehorn some greens in before our day gets underway.

This is a great combo of sweet tomatoes and crunchy veg, but feel free to mix it up! Asparagus is fantastic when sauteed (like this breakfast side dish), as is kale. Even broccoli if you don’t have broccolini! Add a slice of sourdough if you like (or a cupful of cooked quinoa or farro) or take it as it is.

Servings are for one person, so adjust accordingly.

Instructions
  1. In a medium frying pan, saute the broccolini in a little organic olive oil over medium heat for a few minutes or until the colour starts to go bright green.
  2. Throw in the tomato and cook alongside until it starts to soften.
  3. When the broccolini and tomato are cooked, throw in the spinach to wilt and season with salt and pepper.
  4. Place the veggies on a plate and add the avocado half.
  5. Meanwile, fry an egg in the pan until done to your liking.
  6. Serve the veggies topped with egg, parmesan, chilli flakes, fresh parmesan and a squeeze of fresh lemon.
