We all know we should eat more veg – truly we do! And one meal we fall down at is usually breakfast. Maybe we don’t have time, maybe we have more of a sweet tooth, but that just means we’ve got more opportunity to shoehorn some greens in before our day gets underway.
This is a great combo of sweet tomatoes and crunchy veg, but feel free to mix it up! Asparagus is fantastic when sauteed (like this breakfast side dish), as is kale. Even broccoli if you don’t have broccolini! Add a slice of sourdough if you like (or a cupful of cooked quinoa or farro) or take it as it is.
