I had absolutely no idea what I was doing when it came to making onion relish but I thought I would give it a try. Onion is such a great side to may dishes and so easy to cook. Slicing it up isn’t so friendly, and I would love to hear how you stop yourself from crying when you cut these little guys up!
Anyway, I simply cut up 2kg of onions and added them to a large pot with approx 2 -3 tablespoons of butter. (There were lots of tears!) On a low heat I continually stirred the onion until the became soft and translucent. This is when I started to add a little bit of this and that; Balsamic vinegar, Sherry, salt and pepper, brown sugar & a dash of red wine vinegar. I have know idea of the volumes I added but just kept adding until I thought it taste delicious! Next time I think I will add a little chilly too.
This filled 6 sterilised jars that will keep for a few months in the fridge.
Onion relish is great to complement steak, lamb chops and as a topping on on savoury biscuits and next time we make pizzas I might even add a little bit to them too.
I might even put a nice little piece of fabric over the lid and make a little christmas hamper full of all our home made goodies, for our friends and family members.
