Lets make those school mornings easier by having breakfast prepared with these quick and easy Mini Quiche.
This week we made some egg muffins that can also be frozen for another day. Make a big batch, freeze them up, get them out the night before and quickly reheat in the morning. It’s nice to think the kids start the day with a quick yet health meal.
Ingredients:
8 Eggs
2 Spring Onions – sliced
Mushrooms – Sliced
4 slices of bacon – diced
4 Â Kale leaves – sliced
1 Tomato – diced
Method:
Combine all ingredients in a bowl and whisk together.
Spoon into a muffin tray and bake for 25-30 mins on 200ºC
