I don’t know about you but sometimes it is difficult to be constantly thinking of different ways to serve a delicious side of vegetables with the weekday meal.
One that is nutritious, tasty and complimentary to the rest of the dish.
I love this version of greens because it is so simple, fresh and goes with almost everything.
Lemon Scented Spring Greens
1 small onion diced
1 bunch asparagus
1 head broccoli
juice and zest of 1 lemon
salt and pepper
1 teaspoon butter
Chop all the vegetables into small bite sized pieces roughly 2cm x 2cm pieces. Make sure you use all the broccoli stalk too! It has a fabulous texture along with great taste.
On a medium heat fry pan saute the onion in olive oil, butter and salt and pepper to taste.
When the onion is just getting colour add the other vegetables and toss well to coat in the onion/butter mixture, cook for 3-5 minutes.
Add the zest and juice of the lemon and toss well to combine.
I served mine this week with lamb ragout, it was a perfect accompaniment to cut through the richness of the meat. It would also work really well with Crispy skin salmon or a creamy chicken breast with sundried tomatoes.
