I’d heard rumours about chocolate cake or muffins which had zucchini in them and that the vegetable gave the dough a lovely texture. I decided to give it a go myself by substituting it into an easy chocolate cake recipe. I did a little bit of research first. You are advised to drain the zucchini […]

Pork Tonkatsu is a Japanese dish. It is traditionally served with shredded cabbage, pickled vegetables, rice and miso soup as a set. I recently visited Japan for the first time in ten years and fell in love with Tonkatsu again. I never fully appreciated cabbage until I experienced it in Japan. It is a side for many dishes there and demonstrates that something as simple as shredded cabbage with a sauce can be a delicious accompaniment. It can be a welcome alternative to green salad.
The Tonkatsu set was also very popular with our children in our travels, mostly because of the deep fried crunchy meat, and the sticky rice. It is a good meal to practise using chopsticks for that reason. Whilst Tonkatsu usually uses pork fillets, it is also just as nice with chicken.

We can’t tell you how much better-tasting organic asparagus is – we’re sure you already know! – and often only needs a little salt and something yum to dip it in. Enter: hollandaise sauce. Absolutely perfect with the seasonal treat that is asparagus, but also notoriously difficult to make at home. The sauce can split, […]
With only vegetables, salt and water (ok and some herbs and spices if we’re feeling jaunty), the vegetable stock that flavours all the dishes of our life can just taste like vegetables and salt and water. However, with a bit of tinkering, we can have a rich, deeply-flavoured veggie stock that can hold up to […]
