Gazpacho

Cold soup? Sure it sounds a bit strange to a culture that didn’t really grow up with it, but the Spanish can’t have been wrong for all these years! Gazpacho is an incredibly delicious offering, and just the thing for a light meal on a stinking hot day. I like it as cold as absolutely […]

Beautifully Rich Vegetable Stock

With only vegetables, salt and water (ok and some herbs and spices if we’re feeling jaunty), the vegetable stock that flavours all the dishes of our life can just taste like vegetables and salt and water. And the longer you cook, the better it will be! I love to cook a big pot and freeze the leftovers for a busy day or for Ben’s lunches throughout the week.

Vegetarian Lasagna

Vegetarian Lasagna is a great family dish for so many reasons. Firstly, you can disguise a plethora of vegetables between that familiar bolognese and cheese sauce combination that most children love. It is also an excellent meal to prepare in advance to keep in the freezer for a busy day. Even better, the longer you […]
