It’s more than just a dip – hommus is life. If you’re especially hungry, top this with hearty salad ingredients and scoop up with warmed flatbread. If you are using it as a dip, double the hommus ingredients and go to town! Crispy flatbread crackers a must for grabbing all the crunchy toppings. Print Recipe […]
We all know we should eat more veg – truly we do! And one meal we fall down at is usually breakfast. Maybe we don’t have time, maybe we have more of a sweet tooth, but that just means we’ve got more opportunity to shoehorn some greens in before our day gets underway. This is […]
Taco lovers, have you tried a Mexican Taco Bowl? It is a healthy and easy take on the original and much less messy! It doesn’t take too long to throw together, especially if you have rice at the ready. Cook it up for the family for a refreshing summer dinner. Alternatively, prep it on Sunday for a few lunches during the week. These toppings for the bowl are delish but you can change it up with whatever you fancy: substitute rice for quinoa, add some mixed lettuce leaves, or top with vegan cream cheese instead of cheese and sour cream for a dairy-free meal. Let fussy eaters choose their own toppings or eat it deconstructed. It’s a great meal to eat on the back deck on a warm evening and another bonus is that there’s not much washing up. Buen provecho!

I recently bought the most delicious roast veg and egg pie there as a lunch option for myself and saw that they also sold them in a family size. It was simple to heat up in the oven at the end of a work day and serve with some steamed veg from The Organic Place.
It got me thinking I should try and replicate my own pie to freeze. Whilst there is a lot of cooking time, unless you’re using leftover roast veggies, it was very easy to make. This dish is great for Meat Free Monday or to be portioned out for lunches or even breakfast!
As promised, this week we have a Low FODMAP meal for those who follow the diet, or if you are entertaining people who are Low FODMAP and you need a meal to serve them. If neither apply to you, I promise it is still a delish meal to add to your regular recipes. The beef burgers are great by themselves on a bun for your fussy eaters or if you like your burgers full you can squeeze as many fillers as you like in with them. I have also included a simple and scrumptious accompaniment of wedges which are crispy on the outside and soft on the inside. Yum! Here’s what you need:
