Hello and Seasons Greetings to everyone! There was an abundance of great veg in my bag this week how about you?!
I’m really trying not to do to much extra at this hectic time of year and so I thought, how can i do something quick, tasty and beautiful? Well it was made easier by the colours in my bag; with beautiful orange, yellow and green there was only one thing for it; just grill them up and serve with just a salty citrus kick for extra flavor!
Grilled Vegetables with Lime Butter
Ingredients:
1/4 Pumpkin
1 Zucchini
1 Cob Corn
1 Lime
Small bunch Corriander
Salt and Pepper
Method
Slice the pumpkin thinly, just left in the quarter shape with skin on (pumpkin skin can be eaten when cooked and has a lovely flavour). Slice Zucchini into 1cm strips lengthways then in half through the middle. Just peel corn and leave whole.
In a griddle pan put 2 tbsp Olive Oil and salt and pepper on med to high heat and add vegetables. Turn after 3-4 minutes and make several turns of the corn while cooking.
For the butter, zest 1/2 lime and juice 1/2 lime into a small bowl. Add 75gms butter and 3 tablespoon fresh coriander, salt and pepper. Combine everything to make a zesty and salty butter to add to your vegetables.
This would be delicious served as a side for tacos and wraps. My sister and I had it on its own for lunch today. Light, Seasonal and really yummy.
