Merry Christmas! The festive season is upon us and that means so is the heat! And the best thing for a quick dinner side dish in the summer is undeniably a salad.
While salads can be put in the boring basket with the ubiquitous lettuce, tomato and cucumber (a classic really) ANY veg can be turned into a salad with a few herbs and a good dressing. This week you would have found radish in your mixed bag, along with asparagus, chilli and mint, and so I decided to show you have can turn all these ingredients into a yummy salad.
Grilled Asparagus and Radish Salad with Orange Vinaigrette
4 x Large Asparagus Spears
3 x Med Radishes
1/4 Fresh Red Chilli
1 TBSP Fresh Chopped Mint
1 x Small Cucumber
Juice of 1 Orange
1 TBSP Olive Oil
1/4 TSPN Dijon
1 TSPN Honey
1 TBSP Red Wine Vinegar
Salt to taste
Pepper to taste
Combine all ingredients with a whisk and set dressing aside
Cut asparagus spears into thirds and pan fry in a dash of olive oil and salt and pepper to taste.
Finely slice cucumber and radishes into rounds.
Finely chop deseeded chilli.
Finely chop mint.
Combine all the vegetables, mint and chilli and toss through with dressing.
And not only is it delicious it’s also red and green for christmas!! Im serving mine with shredded roast chicken for the quickest of quick summer dinners. Enjoy!
