So many lovely greens in the bag this week. Brussel sprouts, spinach, cucumber!
How to combine all those things, give it a spring feel and be good to your gut!
GRAIN FREE GREEN FULL SUSHI – Wasabi Tuna Optional!
I cut out the rice and replaced it with a beautiful shredded greens mix, you could also make it completely vegan by omitting the tuna mix.
Ingredients
4 large Brussel Sprouts
Handful Spinach
1 Spring Onion
Avocado Sliced
Cucumber into long thin sticks
1 Tablespoon Ponzu Sauce
1/2 Tablespoon Soy Sauce
Couple of drops of Sesame Oil
1 small tin olive oil tuna
1 Tablespoon mayonnaise
1 teaspoon Wasabi
2 x Sheets Seaweed
For the shredded greens – Finely slice the brussel sprouts, spinach and spring onion. Dress with the ponzu and soy sauces, add the sesame oil and mix well.
For the Wasabi Tuna – Drain the tuna and in a bowl combine with mayonnaise and wasabi.
To assemble, lay out your seaweed sheets on a flat surface and lay on your avocado slices and cucumber sticks about 5 centimetres from the bottom edge. Top with the shredded greens mix making an even layer then top that with the tuna mix.
Roll up the sushi carefully and cut with a serrated knife into even pieces.
I have served mine with chilli dipping sauce for that extra kick.
A great light lunch or even greater summer party canapé.
