Easy breakfasts for school mornings


As hard as we try, sometimes school mornings are absolutely frantic – everyone running around trying to find shoes and homework and we’re already five minutes late and haven’t even left yet.

In a perfect world we’d all get up early enough and have breakfasts and lunches organised the night before. In our world, however, we’ve rounded up some ideas to get you started on the right foot each weekday morning, with every tummy full before stepping out the door.

Easy School Morning Breakfasts to Make the Night Before

Silverbeet and pumpkin mini quiches – Easy to make in silicone muffin trays while you’re making dinner, and reheat quickly the next morning. Also good for lunchboxes!

Whole-Wheat Waffles – my kids love these waffles and they freeze well. Reheat in the toaster the next morning for speedy healthy waffles!

Slow Cooked Porridge – Grab your crockpot and pop this in before bed – you’ll wake up to instant breakfast for the whole family!

Layered Chia Pudding – These can be popped in the fridge the night before and customised with whatever you have on hand. SO pretty and awesome for folk who find the texture of chia pudding a bit off-putting (aka me!).

Make-Ahead Muffin Melts – cheesy toasty muffins made the night before and grilled for 4 minutes in the morning. Sign me up!

Overnight Honey Oats – or anything oats really! If you’re not a fan of eating cold porridge, then feel free to warm it up in the morning.

Baked French Toast Casserole with Maple Syrup – Saves making individual French toast serves.

Peanut Butter and Banana Porridge Bake – everyone I know who tries this absolutely loves it! Usable for a couple of days’ worth of breakfasts too! Perfect.

Easy School Morning Breakfasts

Blueberry Buckwheat Pikelets – make a double batch and use a big frying pan! They cook up super quick.

Mini Yogurt Pancakes – In a pinch these can also be made the night before and quickly heated before school for breakfast.

Pancake Mini Muffins – even better, put your favourite pancake mix into muffin tin holes and bake it instead! Saves flipping and you can do other stuff while they bake in the oven (like find matching socks!)

Tropical Smoothies – for people really on the run!

Easy Cheesy Frittata – Crack a couple of eggs into some assorted veg, pop in the oven, and you’ve got your hands free to get ready while breakfast bakes. Will feed everyone.

Beans on Toast – Don’t forget this super-fast, super-filling, super-full-of-fibre option. Such a delicious way to start the day.

Get up and Go Breakfast Muffins – honestly there’s not much better than the smell of these coming from the oven on a rushed morning! You can even eat them on the run.
