Roast Veg and Egg Pie

When our lives get busy it is easy to fall back on ready made food. Luckily for me we have an amazing local cafe that makes delicious home-style pies and pastries which I often buy and freeze for crazy days. I recently bought the most delicious roast veg and egg pie there as a lunch option for myself and saw that they also sold them in a family size. It was simple to heat up in the oven at the end of a work day and serve with some steamed veg from The Organic Place.
It got me thinking I should try and replicate my own pie to freeze. Whilst there is a lot of cooking time, unless you’re using leftover roast veggies, it was very easy to make. This dish is great for Meat Free Monday or to be portioned out for lunches or even breakfast!

If you are a fan of Japanese flavours, this is a simple way to incorporate them into a healthy dish. Better still, you can tailor the amount of miso and soy sauce you use to suit your family’s tastes. This recipe works best with a wok, and using sushi rice adds to the flavour of the dish.

I have my handful of favourite chefs and Pete Evens just happens to be one of them. No matter what stage of his food journey he is at, this man can cook! This recipe comes from “Cook with Love,” by Pete Evans. It’s the best $15 I’ve ever spent on a cookbook and the best Organic Cherry Tomato Pasta I’ve ever had. Not only is it perfect for Meat-free Monday is also perfect for those nights when your in a hurry and need a healthy dish on the table that everyone will enjoy.

What could be more fitting for the Easter holiday weekend than eggs in a meal? No, not the chocolate kind, (I’m sure you’ve had enough of those already!), but the wholesome ones, that might balance out all the chocolate eating you’ve been doing. This is one of my favourite ways to have eggs.
