Hi, Josh here. Thank you all for liking my last recipe everyone, it has given me endless ammunition against Sarah (hahaha).
But seriously, I quite like cooking occasionally and I am always having a sticky beak into the Organic Place bag every week, and while the fruit is my favourite (mmm…plums) there was corn in there this week and I do love corn.
So here is my corn recipe, hopefully you all like it again and much as my Tiddly Oggies.
Ingredients:
The Three C’s – Corn with Coriander and Cumin
2 x Corn Cobs
1 Tsp Cumin Seeds
1 Tsp Coriander Seeds
1 Tsp Salt
1/4 Tsp Cayenne (optional, i know its another “C” but it can be left out)
1/2 Tsp Lime Zest
Parmesan Cheese
Method:
In a griddle pan with the olive oil cook off your corn for approx. 10 minutes on a high heat to get a nice brown colouring on it.
In a mortar grind the spices, salt and lime zest.
Add the spices to the pan after the corn has cooked for 10 minutes, to coat the corn and release the flavours of the spices.
Serve with butter and grated parmesan cheese.
Sooooooo good.
