Chimichurri Sauce

 

A few years ago now when flicking through the page of a Pete Evans cookbook I came across a recipe for Chimichurri Sauce. With a love for all things hot and coriander I knew this would be something that both Ben and myself would enjoy. It takes 3 minutes to make and has become a regular in our home. It’s great on top of steak and as a marinade on chicken thighs too!

Chimichurri Sauce

Ingredients

3 organic garlic cloves

1 chilli chopped

1 large handful flat-leaf organic(Italian) parsley

1 large handful organic coriander (cilantro)

100 ml of organic red wine vinegar

Pinch of ground cumin

300 ml organic olive oil

Method:

This one’s pretty simple. Chop all the ingredients and combine in a bowl or put all the ingredients in a blender/Thermomix and turn on. And there you have it.
