I love a salad that is a meal in itself. And the caesar salad is definitely that, with a beautiful base that you can add any number of things to; blackened salmon fillet, cajun prawns, herb chicken many many options.
I received a beautiful cos lettuce in my bag this week and made a classic Caesar. The key to a great caesar said lies in the dressing.
4 Bacon rashers chunky diced
2 organic eggs poached
5 tablespoons grated parmesan
4 tablespoons good organic whole egg mayonnaise
juice of whole medium organic lemon
1 crushed organic garlic clove
1 teaspoon cracked black pepper
6 anchovy fillets finely diced
Makes 2 Serves
Poach your eggs in salted water with a splash of white vinegar and put aside when at the soft poach stage.
Cook off your chunky diced bacon in a pan and set aside.
Chop the washed cos lettuce leaves into large bite sized pieces and put into a mixing bowl.
To make the dressing; combine the mayonnaise , parmesan, anchovies, lemon juice, garlic and pepper.
To assemble the salad add the dressing to the cos and mix until all the lettuce is covered. Add the bacon and gently mix again.
Place in a serving bowl and top with the poached egg.
With the cheese and anchovies in the dressing it makes sure that every bite has those flavours in the salad.
You could also add croutons for crunch or omit them for a gluten free low carb option lunch or dinner.
My favourite Caesar is just this way but herbed chicken is a great way to make this a really filling meal.
