Cheesy, creamy, oniony goodness… and filling and comforting to boot! Has anyone ever had traditional Irish champ? It’s a scrummy dish of potatoes, sweated leeks, butter cream and cheese. I wanted to twist it up with greens and broccoli is so beautiful at the moment AND is a fantastic partner with cheese.
Broccoli Champ
1 Head Broccoli
1/2 Head Cauliflower
1 Bunch Bok Choy
1 small onion sliced finely
50 grams butter
1/3 cup cream
1/2 cup cheese of choice (i used Colby)
Salt and pepper to taste
METHOD
In boiling salted water, partly cook the broccoli and cauliflower florets for approx 5 minutes. At the very end throw in the bok choy too, it only needs a slight wilting.
Drain the vegetables and set aside. In the same pot put the butter and sliced onions and gently cook for 3 minutes. Add back the cooked vegetables and add the cream, cheese and salt and pepper to taste. Cook for a further 3 minutes until the cream has reduced slightly.
When serving add more grated cheese on top. Delicious! I served mine with Blackened Southern Fried Chicken.
