The meal for anytime of the day!
Baked eggs, this one was first passed onto me from my best friend and then I have adjusted each time with whatever veggies are in the fridge!
This time was lucky enough to have bag full of organic greens to add in!
Serves 2
Ingredients:
¼ head of broccoli
1 spring onion
1 zuchinni diced
½ capsicum diced
a good bunch of spinach or kale
4 eggs
A sprinkle of cheese
Optional extras:
Quinoa or 1 slice of toasted sourdough
Mushrooms
Any other veggies in the fridge
Method:
Preheat oven to 160deg
If using quinoa cook up this first either in a thermomix for 14 minutes on speed 1 or cooking on the stove top. Once nearly cooked then start step 2.
Use a pan that has a lid and is oven proof! Fry up your veggies using 1 tsp of coconut oil. Can add in any spices you like, dukkah is a good option
Once veggies are cooked add in quinoa if using and mix together. Split in half in the pan ( have a clear gap in the middle)
Crack n egg and slowly place it on top of the veggies, repeat once on the same side and then do the next two eggs on the other half.
Sprinkle a little bit of cheese on top (optional)
Put lid on pan and place in the oven for approximately 10 minutes, depending on how you like your eggs
