A lovely, fresh, summer surprise in the bags this week; green beans! Beans are a wonderfully versatile vegetable which can take on flavours of many different ingredients. There was also ginger in the bag this week which inspired me to put an Asian twist on my recipe for the week while adding some organic cashews for extra crunch!
Asian Style Green Beans
200g green beans
1 clove garlic
1 piece of ginger (roughly same size of garlic)
1 tbsp butter
1/4 cup cashews
Take the ends off your beans and blanch in lightly salted boiling water for 3 minutes only, then drain immediately to keep the crunch of the beans.
In a small fry pan on med to low heat dry toast the cashews until they have taken on some colour and remove from the pan.
Finely chop garlic and ginger and add to the pan with butter on low heat, lightly fry until it gives off a lovely aroma then add the blanched beans and toasted cashews.
