Ok guys this weeks recipe is a beauty! I can’t take all the credit though, I had a similar dish at Jeds in Gisborne recently; I had never seen anything like it and could not stop thinking about for a week!

I have been meaning to try to recreate it for a while now and when I saw the abundance of broccoli in my bag this week I thought now is the time! I love greens and it is not too often seen in breakfast meals except spinach or if you drink green smoothies so this was a revolutionary dish for me.

 

The Greens Bowl

1 x Large head Broccoli

1/4 Large Cauliflower

1/4 cup Pepitas

1/2 Green apple (Grated)

2 Sprigs Mint

Goats Fetta

Organic egg

Black Pepper

Method

Steam the broccoli and cauliflower until just past tender in salted water. In a food processor or blender pulse in small batches so as not to create paste.

In a mixing bowl combine the pulsed broccoli and cauliflower with the pepitas, grated apple and finely chopped mint and season with black pepper. Combine well to ensure that the mint has worked its way through all of the greens.

Load into your favourite bowl and top with goats feta and a poached egg for that full feeling!
