Broccoli and Parmesan Penne

Warm comforting hearty food, that’s what it’s all about at the moment with the chilly winds and early sunsets. This sort of food can take a while to cook; ragouts, soups and stews are lovely dishes that fit the bill but take time. This recipe brings all the elements of warm hearty comfort food with the minimum of fuss and time.

Broccoli and Parmesan Penne

250g dry penne

2 Tablespoons Butter

1 Tablespoon Olive Oil

1 Onion

1 clove Garlic

1 Head of Broccoli

1 Cup Parmesan

Salt and Pepper to taste

1 Tablespoon Cream

Broccoli and Parmesan Penne

Method:

Bring a large pot of salted water to a rapid boil and add the penne.

While the pasta is cooking sautee the onion and garlic in the butter and olive oil in a largish frying pan, only until transparent. Do not allow to brown.

When the pasta is 2 minutes from being ready add the broccoli florets to the water. I cook the broccoli just overdone so it breaks up nicely in the pasta.

Drain penne and broccoli and add to the onions and garlic in the pan. Toss together and add the parmesan and cream. toss through for 1 minute and its ready to serve.

Quick, deliciously simply and wonderfully comforting.
